  • 90g chocolate chunks or chopped chocolate (about ½ cup)
  • ½ tsp fine sea salt

Instructions

  2. Whip the eggs
    In a separate bowl, beat the eggs and sugar on medium-high speed for 3–4 minutes until light, airy, and pale in color.
  3. Incorporate chocolate
    Gently blend the melted chocolate mixture into the egg mixture. Mix for another 1–2 minutes, scraping the sides to ensure a silky consistency.
  4. Sift and mix
    Add the sifted cocoa powder and salt, mixing just until combined.
  5. Fold and chill
    Fold in the chocolate chunks. Chill the batter for 10–15 minutes to firm slightly, making it easier to scoop.
  6. Scoop and bake
    Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper. Using a tablespoon or small cookie scoop, portion the dough onto the sheets, spaced 2–3 inches apart. Bake one sheet at a time for 12–15 minutes, until just set with lightly cracked tops.
  7. Cool and serve
    Let cookies cool on the tray for at least 10 minutes before serving.
